Piquante Peach Salad

 
 

 

 
Just in case Aunt Pit didn't include the details of using powdered gelatin, here they are:
Sprinkle gelatin on cold liquid.
Let stand for 5 to 10 minutes.
Add warm liquid or heat gently.
Stir until dissolved.

Drain syrup from 1 can of peaches.
Soak 2 tbsp gelatine in 1/4 cup cold water.
Add 1 stick cinnamon and
1/4 tsp each of salt and paprika to syrup.
Bring to boiling point and add softened gelatine
Stir until dissolved,
strain and add 2 tbsp lemon juice.
Place peach halves in the bottom of molds or cups - cut side up.
Pour mixture in and set aside to cool until firm.
Turn out on lettuce leaves and serve with mayonnaise.
